The trickiest part is finding the little guys at the market since they sell them pre-bagged in their shells. You'll need to look closely in the bag and find a store that has a good turnover. Once you get them home, feed them a few hours before cooking and they will be perfect for this recipe! Ingredients: Mussels Steamed Rice Parsley Garlic Crusty New Zealand Mussels Bread Olive Oil Butter Salt Pepper 1/2 cup white wine or dry vermouth 2 tablespoons olive oil 4 tablespoons butter Handful of parsley leaves, chopped 1 clove garlic, minced Sea salt Freshly ground black pepper Lemon wedges Method: Assemble all your ingredients. Put a large pan over medium heat with about an inch of water. Add the mussels to the pan and cover. Cook for about 5 minutes until they're all open, stirring occasionally. Remove the mussels from their shells and set aside in a bowl. Discard any unopened shells.

Mussels are one of my favorite things to order when I go out for dinner. They're just the right amount of work, they're fun to eat, and they taste amazing. Reduce heat to medium low, cover, and cook for 15-20 minutes or until done. Place 2 tablespoons of olive oil into a skillet over low heat while you scrape off all that tasty brown gunk (that's called flavor). Add chopped garlic and sauté for no more than 1 minute (you don't want brown garlic!). Add the butter and stir until melted. Stir in the white wine (or vermouth) and simmer for 5 minutes to reduce slightly. Add all of the mussels to the skillet, sprinkle Littleneck Clams them with sea salt, pepper, and chopped parsley leaves. Cook for another 2-3 minutes or until the sauce is reduced by half. Serve over your perfectly cooked rice! Mmm… delicious! Enjoy!
